Strawberry Mixture
- 1 pound strawberries, hulled and sliced
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
Mascarpone Cream
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream

- 1 teaspoon vanilla extract

Instructions
- Prepare the Strawberry Mixture: In a bowl, combine the hulled and sliced strawberries with granulated sugar and lemon juice. Stir gently and allow to macerate at room temperature for about 30 minutes until the strawberries release their juice and become soft.
- Make the Mascarpone Cream: In a separate mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. In another bowl, soften the mascarpone cheese slightly. Gently fold the whipped cream into the mascarpone until smooth and creamy, being careful not to deflate the mixture.
- Assemble the Tiramisu: Quickly dip each ladyfinger into the strawberry juice from the macerated strawberries to soak. Lay a layer of soaked ladyfingers in the bottom of your serving dish (about 8×8 inches or similar). Spread half of the mascarpone cream over the ladyfingers evenly. Spoon half of the macerated strawberries and some of their juice over the cream layer.
- Repeat Layers: Add another layer of soaked ladyfingers on top of the strawberries. Spread the remaining mascarpone cream over this layer. Finally, spoon the remaining strawberries on top for garnish.
- Chill and Serve: Cover and refrigerate the assembled tiramisu for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set. Before serving, garnish with extra fresh strawberries and sprigs of mint for a vibrant finish.

- Quickly dip the ladyfingers to avoid sogginess; they should be moist but not falling apart.
