This Strawberry Cake with Cream Cheese Frosting is a delightful and moist yellow cake infused with strawberry jam, topped with a luscious strawberry-flavored cream cheese frosting. Perfect for celebrations, it offers a beautiful balance of sweet and tangy flavors with a soft crumb and a smooth, creamy finish.

  • Total Time: 1 hour
  • Yield: 24 servings

Ingredients

Cake

  • 1 bag Cup4Cup Yellow Cake Mix
  • 1½ cups whole milk (room temperature)
  • ¾ cup melted butter (avocado oil or a neutral oil can be substituted)
  • 4 large eggs (room temperature)
  • 16.5 ounces (1 jar) strawberry jam

Frosting

  • 8 ounces cream cheese (softened)
  • 8 ounces butter (softened)
  • 16.5 ounces (1 jar) strawberry jam
  • 4 cups powdered sugar

Topping (Optional)

  • Freeze dried strawberries, crushed

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (163°C). Generously grease a 13×18 inch half sheet pan or line it with parchment paper to prevent sticking.
  2. Mix the Batter: In a large bowl, whisk together the eggs, whole milk, melted butter, and strawberry jam until fully combined. Slowly add the Cup4Cup Yellow Cake Mix and whisk until the batter is smooth and homogeneous. Pour the batter evenly into the prepared sheet pan.
  3. Bake the Cake: Bake the cake in the preheated oven for about 45 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow to cool completely in the pan.
  4. Make the Frosting: While the cake bakes, prepare the frosting. In a large bowl, combine the softened cream cheese, softened butter, and strawberry jam. Using an electric hand mixer, beat on high speed until the mixture is creamy and well combined. Gradually add powdered sugar, one cup at a time, beating thoroughly after each addition until the frosting is smooth and fluffy.
  5. Frost and Decorate: Once the cake has completely cooled, spread the cream cheese strawberry frosting evenly over the top. For an added touch, sprinkle crushed freeze-dried strawberries on top. Slice, serve, and enjoy!

Notes

  • For best results, ensure all refrigerated ingredients are at room temperature before mixing.
  • You can substitute avocado oil or another neutral oil for melted butter if preferred.
  • Freeze-dried strawberries are optional but add a lovely texture and intensified strawberry flavor.
  • Store cake covered in the refrigerator for up to 3 days for freshness.
  • Allow the cake to cool fully before frosting to prevent melting the frosting.
