  • 1 teaspoon kosher salt, divided plus more to taste
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the potatoes: Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the Yukon Gold potato cubes in a single layer and season with half the kosher salt. Cook the potatoes for about 10-15 minutes, stirring occasionally, until they are golden brown and tender.
  2. Add garlic and herbs: Stir in the minced garlic, thyme, and oregano to the potatoes. Continue cooking for another 2 minutes until the garlic is fragrant. Remove the potatoes from the skillet and set aside.
  3. Sear the steak bites: In the same skillet, add the remaining 1 tablespoon of olive oil and heat over medium-high heat. Pat the ribeye steak cubes dry with paper towels and season with the remaining kosher salt. Add the steak cubes to the hot skillet in a single layer. Cook for about 3-4 minutes, turning occasionally, to achieve a nice sear and desired doneness.
  4. Add butter and combine: Lower the heat to medium and add the unsalted butter to the skillet with the steak. Stir the butter into the meat as it melts. Return the cooked potatoes to the skillet and toss everything together to combine and warm through for 1-2 minutes.
