Noodles
- 16 ounces brown rice noodles
Sauce
- 3 large cloves garlic (or 4-5 small cloves), finely minced
- 1 tablespoon fresh grated ginger
- 1 tablespoon oil (olive oil recommended)
- 2/3 cup creamy peanut butter
- 4 tablespoons low sodium tamari or soy sauce
- 1/3-1 cup hot water
- 1 tablespoon rice vinegar
- 1 tablespoon toasted sesame oil
- 1-2 tablespoons sriracha
- 1-2 tablespoons maple syrup or honey
- 1/2 teaspoon red pepper flakes (optional for less spice)
- Optional: 2 teaspoons chili garlic sauce
To Serve
- Crushed peanuts
- Scallions
- Additional red pepper flakes
Instructions
- Boil water: Bring a large pot of water to a rolling boil for cooking the noodles.
- Cook noodles: Add brown rice noodles to the boiling water and cook according to the package instructions until al dente. Drain and set aside.
- Sauté garlic: Finely mince the garlic cloves and heat 1 tablespoon of oil in a sauté pan over low heat. Add the garlic to the pan.
- Sauté garlic and ginger: Cook the garlic until golden brown for about 2 minutes, then add the freshly grated ginger and sauté for another minute, stirring frequently to prevent burning.
- Combine sauce ingredients: Remove the pan from heat and add peanut butter, tamari (or soy sauce), rice vinegar, toasted sesame oil, sriracha, maple syrup or honey, red pepper flakes, and optional chili garlic sauce. Start with 1/3 cup hot water to help blend the ingredients.
- Whisk sauce: Whisk all the sauce ingredients together until smooth, adding more hot water as needed to achieve your preferred saucy consistency. The amount of water will vary based on the peanut butter brand and personal preference.
- Taste and adjust: Taste the sauce and adjust seasoning by adding more soy sauce for saltiness or sriracha for heat according to your liking.
- Combine noodles and sauce: Add about half of the prepared sauce to the cooked noodles and toss to coat evenly. Reserve the remaining sauce to add as needed.
- Adjust sauciness: Taste the sauced noodles and gradually mix in more sauce if desired for a saucier dish. This allows for customizing the flavor intensity.
- Serve: Plate the noodles and garnish with crushed peanuts, chopped scallions, and additional red pepper flakes. Enjoy alongside your favorite veggies or protein.

- You can adjust the spice level by controlling the amount of sriracha and red pepper flakes.
- Use hot water to mix the peanut butter sauce more easily and achieve a smooth texture.
- Reserve some sauce to add later in case you want to add protein like chicken or tofu or vegetables.

- For a vegan version, use maple syrup instead of honey.
