Ingredients
Meat and Vegetables
- 1 lb ground beef, browned and drained
- 1 small onion, diced
- 1 can (15 oz) corn, drained
Dairy and Canned Goods
- 1 can (10.5 oz) cream of mushroom or cream of chicken soup
- ½ cup sour cream
- 1½ cups shredded cheddar cheese, mild or medium
Seasonings
- 1 teaspoon garlic powder
- Salt and pepper to taste
Other
- 1 bag (about 20 oz) frozen tater tots
Instructions
- Brown the Ground Beef: In a skillet over medium heat, cook the ground beef until fully browned and no longer pink. Drain excess fat to reduce greasiness in the casserole.
- Combine Ingredients: In your slow cooker, add the browned ground beef, diced onion, drained corn, cream of mushroom or chicken soup, sour cream, garlic powder, salt, and pepper. Stir everything together until well combined.
- Layer Tater Tots: Evenly spread the frozen tater tots over the top of the meat mixture in the slow cooker. These will cook on top and create a crispy, golden layer.
- Cook the Casserole: Cover and cook on low for 4 to 6 hours or on high for 2 to 3 hours, until the tater tots are tender and the casserole is heated through.
- Add Cheese and Finish Cooking: About 15 minutes before serving, sprinkle the shredded cheddar cheese evenly over the top of the casserole. Cover again and continue cooking until the cheese melts and becomes bubbly.
- Serve: Once the cheese is melted and the casserole is hot, serve directly from the slow cooker onto plates or bowls. Enjoy your comforting cowboy casserole!

- You can substitute cream of mushroom soup with cream of chicken depending on your flavor preference.
- For a spicier version, add chili powder or diced jalapeños to the meat mixture.
