Instructions
- Prepare the shrimp: Pat the shrimp dry thoroughly with paper towels and set them aside. This ensures they sear nicely and do not steam during cooking.
- Sauté garlic and seasonings: Heat a large skillet over medium heat, then add olive oil and butter. Once the butter has melted, add the finely chopped garlic and red pepper flakes if using. Sauté for 1-2 minutes, stirring frequently, until the garlic becomes soft and fragrant but does not brown.
- Add and reduce wine: Pour in the white wine and allow it to simmer and reduce for 1-2 minutes. This thickens the sauce slightly and concentrates its flavor.
- Add lemon and cheese: Stir in the lemon zest, freshly squeezed lemon juice, and grated Parmesan cheese. Mix all ingredients well and season the sauce with kosher salt to taste.
- Cook the shrimp: Add the prepared shrimp to the skillet. Cook the shrimp on the first side for 2-3 minutes until they start turning pink. Flip shrimp over and cook for an additional 2-3 minutes or until shrimp are fully pink and opaque.
- Final seasoning and serving: Taste the sauce and adjust salt or seasoning if needed. Garnish with chopped fresh parsley. Serve immediately with cooked pasta or your choice of side.
