Shrimp and Seasonings
- 1 lb (450g) shrimp, peeled and deveined
- 4 tbsp olive oil, divided
- 1 tsp dried oregano
- 1 tsp cumin powder
- 1/2 tbsp grated garlic
- 1/2 tbsp lime juice
- 1/2 tsp red chili flakes
- 1/2 tsp black pepper powder
- 1/2 tsp salt (divided)
Vegetables
- 2-3 bell peppers, any color
- 1 onion
Instructions
- Marinate the Shrimp: In a bowl, combine the shrimp with 1 tsp dried oregano, 1 tsp cumin powder, 1/2 tbsp grated garlic, 1/2 tbsp lime juice, 1/2 tsp red chili flakes, 1/2 tsp black pepper powder, and 1/2 tsp salt. Mix thoroughly to coat the shrimp evenly. Let it marinate for 15 to 30 minutes so the flavors infuse.
- Prep the Vegetables: Slice the bell peppers and onion lengthwise into evenly sized strips, about 1/2 inch thick, to ensure even cooking without overcooking the vegetables.
- Sear the Shrimp: Heat 2 tbsp olive oil in a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer. Sear the shrimp for about 2-4 minutes per side depending on size (2 minutes for medium, 4 minutes for jumbo) until opaque and cooked through. Remove shrimp from the skillet and set aside.
- Cook the Vegetables: In the same skillet, add the remaining 2 tbsp olive oil. Sauté the sliced onions until lightly browned, about 3-4 minutes. Add the sliced bell peppers, cooking until they develop a slight char and soften but remain slightly crisp, about 5-7 minutes. Season vegetables with 1/2 tsp dried oregano, 1/2 tsp cumin powder, and salt to taste.
- Combine and Heat Through: Return the seared shrimp to the skillet with vegetables. Toss everything together gently to combine and heat through for 1-2 minutes. Finish with an extra splash of lime juice for a refreshing tang.
- Serve: Serve the shrimp fajitas hot over warm tortillas and top with optional garnishes such as guacamole, sour cream, or extra lime wedges. They can also be enjoyed with nachos, steamed rice, or as a flavorful burrito filling.

- Adjust chili flakes according to your preferred spice level.
- Use any combination of bell pepper colors for a vibrant presentation.
