Ingredients
Sausage
- 13.5 ounces smoked turkey sausages
Vegetables
- 1 small red onion, cut into chunks
- 1 small yellow squash, cut in half and sliced
- 1 medium bell pepper, cut into chunks
- 1 small broccoli bunch, florets separated
- 4 large garlic cloves, minced
Seasoning
- 3 tablespoons olive oil
- 1 tablespoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Optional Garnish
- Parmesan cheese, shredded
- Fresh parsley, chopped
Instructions
- Preheat the Oven: Preheat your oven to 400°F (200°C) to prepare for roasting the sausage and vegetables.
- Prepare the Ingredients: Cut the smoked turkey sausage into bite-sized pieces. Chop the red onion, yellow squash, bell pepper, and separate broccoli into florets. Mince the garlic cloves finely.
- Toss with Seasoning: In a large bowl, combine the sausages and vegetables. Add the minced garlic, olive oil, dried Italian seasoning, salt, and pepper. Toss thoroughly to ensure everything is evenly coated with the seasoning mixture.
- Arrange on Sheet Pan: Spread the sausage and vegetable mixture in a single layer on a large sheet pan to allow even roasting.
- Roast in the Oven: Place the sheet pan in the preheated oven and roast for approximately 25-30 minutes. Midway through cooking, toss or flip the ingredients to ensure even browning and cooking.
- Check for Doneness: Confirm that the sausages are heated through and the vegetables are tender and slightly caramelized at edges.
- Finishing Touches: Remove from oven and optionally sprinkle shredded Parmesan cheese over the hot ingredients allowing it to melt slightly. Garnish with chopped fresh parsley for brightness.
- Serve: Serve the roasted sausage and vegetables hot as a wholesome, satisfying meal.
Notes
- Use smoked turkey sausage for a lower-fat alternative to pork sausage without sacrificing flavor.
- Feel free to substitute or add other vegetables like zucchini, carrots, or mushrooms based on preference or seasonal availability.
- For extra crispness, spread ingredients evenly without overcrowding the pan.
- Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
- Adding Parmesan cheese is optional but adds a nice savory finish.
