Kataifi Rolls
- 1 package kataifi pastry (Fillo Factory), thawed
- 4 oz Greek Feta cheese, drained and crumbled
- 2 oz Gruyère cheese (or Greek graviera), grated
- 2 oz Perocrino cheese (or Greek kefalotiri), grated
- 1 extra large egg (or two large eggs)
- 6 oz butter, melted

- Honey, for drizzling
- Pistachios, chopped, for topping
- Rose petals, for decorating (optional)
Instructions
- Prepare the Filling: In a medium bowl, combine the crumbled feta, grated Gruyère, and grated Perocrino cheeses. Beat the egg(s) lightly and add to the cheese mixture, stirring until all ingredients are well incorporated to create a smooth filling.
- Handle the Kataifi Pastry: Gently pull apart the kataifi pastry to loosen the strands. Cut into manageable strips about 2-3 inches wide. Keep the pastry covered with a slightly damp cloth to prevent drying out during assembly.
- Assemble the Rolls: Place a small spoonful of the cheese filling at one end of each kataifi strip. Carefully roll the pastry tightly around the filling, forming cigar-shaped rolls. Brush each roll generously with melted butter to ensure a crisp, golden crust when baked.
- Arrange for Baking: Place the rolls seam-side down on a baking sheet lined with parchment paper. Brush any remaining butter over the tops of the rolls.
- Bake the Rolls: Preheat the oven to 350°F (175°C). Bake the kataifi rolls for approximately 25-30 minutes or until they turn golden brown and crispy.
- Finish and Serve: Remove from the oven and allow to cool slightly. Drizzle honey over the warm rolls and sprinkle with chopped pistachios. Optionally, garnish with edible rose petals for an elegant touch. Serve warm or at room temperature.
