Mushroom & Spinach Topping

- 200 grams regular white mushrooms, sliced
- 2 cups spinach, chopped or baby spinach leaves
- 1 tbsp garlic powder
- Salt, to taste
- Pepper, to taste
- 1 tbsp dried rosemary (or fresh rosemary)
- 3 tbsp parmesan cheese
Spicy Pepper Honey (Optional)
- Honey, to taste
- Black pepper, to taste
- Cayenne pepper, to taste
- Salt, a pinch
- Paprika, a pinch
Instructions
- Prepare the Savory Egg Mixture: In a shallow bowl, whisk together the eggs, milk, parmesan cheese, Italian seasoning, cayenne pepper, salt, and pepper until well combined to create the savory batter for the French toast.
- Soak the Bread: Dip each slice of bread into the egg mixture, allowing it to soak thoroughly but not become soggy, ensuring both sides are coated evenly.
- Cook the French Toast: Heat a large skillet over medium heat and melt 2 tablespoons of butter. Add the soaked bread slices and cook for about 3-4 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside, keeping warm. Repeat with remaining butter and bread slices.
- Prepare the Mushroom & Spinach Topping: In the same skillet, add olive oil and heat over medium heat. Add the sliced mushrooms and sauté for 5-7 minutes until they release their moisture and start to brown. Stir in the garlic powder, salt, pepper, and rosemary. Add chopped spinach and cook for an additional 2-3 minutes until the spinach wilts. Stir in parmesan cheese and mix until combined.
- Make the Spicy Pepper Honey (Optional): In a small bowl, mix honey with a pinch of black pepper, cayenne pepper, salt, and paprika to your taste preferences, stirring well to blend flavors.
- Assemble and Serve: Plate the French toast slices and generously top with the mushroom and spinach mixture. Drizzle with the spicy pepper honey if using, and serve immediately for a deliciously savory meal with a hint of sweet heat.
