Filling

  • 1/4 pound breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1-1/4 cup milk
  • 1/4 teaspoon seasoned salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon minced rosemary (optional)
  • 1 pinch sage (optional)
  • 5 eggs, scrambled
  • 1 cup shredded cheddar or jack cheese (optional for topping)
  • Everyday Seasoning from Trader Joe’s or other seasoning of choice

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 cup vegetable shortening
  • 1/2 cup butter
  • 1 large egg
  • 1 tablespoon white vinegar
  • 5 tablespoons cold water
  • 1 extra egg plus 2 tablespoons water for egg wash

Instructions

  1. Prepare the dough: In a large mixing bowl, combine the all-purpose flour and salt. Cut in the vegetable shortening and butter until the mixture resembles coarse crumbs. In a separate small bowl, whisk together 1 egg, white vinegar, and cold water. Gradually add this liquid to the flour mixture, stirring until the dough starts to form. Knead gently and wrap in plastic wrap; chill in the refrigerator for at least 30 minutes.
  2. Cook the sausage gravy filling: In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it apart as it cooks. Sprinkle the flour over the sausage and stir for 1-2 minutes to cook the flour. Slowly whisk in the milk, stirring constantly until the mixture thickens into a creamy gravy. Season with seasoned salt, black pepper, rosemary, and sage (if using). Remove from heat and set aside to cool slightly.
  3. Scramble the eggs: In a separate pan, scramble the 5 eggs until fully cooked. Set aside.
  4. Roll out the dough: On a floured surface, roll the chilled dough to about 1/8 inch thickness. Cut into rectangles roughly 4×5 inches in size.
  5. Assemble the Pop-Tarts: Place a spoonful of sausage gravy filling in the center of half of the dough rectangles. Add scrambled eggs on top of the filling. Optionally sprinkle with shredded cheddar or jack cheese. Cover each with another dough rectangle, pressing edges firmly to seal. Use a fork to crimp the edges and poke a few holes on top to allow steam to escape.
  6. Apply egg wash: Whisk the extra egg with 2 tablespoons water and brush it over the Pop-Tart tops for a golden finish.
  7. Bake: Preheat your oven to 375°F (190°C). Place the assembled Pop-Tarts on a baking sheet lined with parchment paper. Bake for 20-25 minutes or until golden brown and cooked through.
