Beef Tips
- 1 tablespoon olive oil
- 2 pounds lean stew beef or beef tips
- Salt and pepper to taste
- 1 medium onion, chopped
- 1 1/2 teaspoons minced garlic
- 2 tablespoons all-purpose flour
Sauce
- 3/4 cup red wine
- 2 cups unsalted beef stock
- 1/4 cup soy sauce
- 3 thyme sprigs
To Serve
- Fresh parsley for garnish
- Hot cooked rice
Instructions
- Prepare the Beef Tips: Heat olive oil in a large skillet over medium-high heat. Season the beef tips with salt and pepper, then brown them in batches to avoid overcrowding. Remove the beef and set aside.
- Sauté Aromatics: In the same skillet, add chopped onion and minced garlic. Cook until the onion is translucent and fragrant, about 3-4 minutes.
- Add Flour: Sprinkle the all-purpose flour over the onions and garlic. Stir well to coat and cook the flour for 1-2 minutes to eliminate the raw taste.
- Deglaze with Wine: Slowly pour in the red wine while stirring, scraping up any browned bits from the bottom of the skillet. Let the wine simmer and reduce slightly for about 3-5 minutes.
- Add Stock and Seasonings: Pour in the unsalted beef stock and soy sauce. Add the thyme sprigs. Stir to combine and bring the mixture to a gentle boil.
- Simmer the Beef: Return the browned beef tips to the skillet. Reduce heat to low, cover, and let everything simmer gently for about 1 to 1 1/2 hours, or until the beef is tender and the sauce has thickened.
- Garnish and Serve: Remove the thyme sprigs. Taste the sauce and adjust seasoning with salt and pepper if needed. Serve the beef tips over hot cooked rice and garnish with fresh parsley.
Notes
- Use lean stew beef or beef tips to ensure tenderness without excessive fat.
- If you prefer a thicker sauce, mix a little cornstarch with water and stir it in during the last 5 minutes of cooking.
- Red wine can be substituted with grape juice or additional beef stock for a non-alcoholic version.
