Instructions
- Brown the Butter: In a saucepan, melt the salted butter over medium heat and cook, stirring frequently, until it turns golden brown and fragrant. Remove from heat and let cool slightly.
- Mix Sugars and Eggs: In a large mixing bowl, combine the browned butter with granulated sugar and brown sugar. Beat in the eggs one at a time, then stir in the vanilla extract until fully incorporated.
- Combine Dry Ingredients: In a separate bowl, whisk together all-purpose flour, cornstarch, baking soda, and baking powder to ensure an even distribution.
- Make the Dough: Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to keep the cookies tender.
- Assemble Cookies: Take a scoop of cookie dough, flatten it slightly in your palm, place a spoonful of diced apple pie filling in the center, then wrap the dough around the filling and seal to form a ball.
- Bake the Cookies: Preheat your oven to 350°F (175°C). Place the cookie balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake for 12-15 minutes or until the edges are golden and the cookies are set.
