This simple roasted garlic recipe transforms a bulb of fresh garlic into soft, caramelized cloves bursting with rich, mellow flavor. Perfect for spreading on bread, mixing into sauces, or enhancing any dish with a subtle garlic sweetness.

  • Total Time: 40 minutes
  • Yield: 6 servings

Ingredients

Ingredients

  • 1 bulb fresh garlic
  • 2 teaspoons olive oil

Instructions

  1. Prepare the garlic bulb: Remove the outer layers of the garlic bulb, exposing the individual cloves still encased in their skins.
  2. Trim the top: Cut off about 1/4 inch from the top of the bulb to reveal the tops of the cloves.
  3. Wrap in foil: Place the garlic bulb onto a prepared sheet of aluminum foil large enough to fully wrap the bulb, then place on a baking sheet.
  4. Add olive oil: Drizzle approximately 2 teaspoons of olive oil evenly over the exposed garlic cloves on the bulb.
  5. Seal the foil packet: Bring the edges of the foil together and fold tightly to enclose the garlic bulb completely.
  6. Roast the garlic: Place the baking sheet in a preheated oven at 400°F (204°C) and roast for 30 to 35 minutes, or until the cloves are tender and soft when pierced.
  7. Cool the garlic: Remove the baking sheet from the oven and let the foil packets cool until safe to handle.
  8. Unwrap and extract cloves: Open the foil and remove the bulb. The roasted cloves should be soft and easily pop out of their skins with a small spoon or butter knife.

Notes

  • Roasted garlic can be stored in an airtight container in the refrigerator for up to 1 week.
  • Use roasted garlic as a spread on bread, in mashed potatoes, or blended into sauces and dressings for a rich, mellow garlic flavor.
  • Be careful when opening the foil packets as steam can escape and cause burns.
  • Adjust roasting time slightly if your oven temperature varies or garlic bulb size differs.
