Ingredients

Roasted Garlic

  • 1-5 heads garlic, tops trimmed about 1/8 inch
  • 1 tablespoon oil

Dip

  • 4 ounces cream cheese, room temperature
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup asiago cheese, shredded or grated
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1/2 teaspoon rosemary, chopped (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1/2 teaspoon pepper

Instructions

  1. Prepare the Roasted Garlic: Preheat your oven to 400°F (200°C). Take 1 to 5 heads of garlic and cut off the top 1/8 inch of each to expose the cloves. Drizzle each head with 1 tablespoon of oil, wrap tightly in aluminum foil, and roast in the oven for about 40 minutes or until the cloves are soft and golden brown. Allow to cool, then squeeze the roasted garlic cloves out of their skins into a bowl.
  2. Mix the Dip Ingredients: In a large bowl, combine 4 ounces of cream cheese (softened to room temperature) with 1 cup shredded mozzarella, 1/4 cup shredded or grated asiago cheese, 1/2 cup sour cream, and 1/4 cup mayonnaise. Add the roasted garlic cloves along with 1/2 teaspoon chopped rosemary (optional), 1/2 teaspoon garlic powder (optional), and 1/2 teaspoon pepper. Mix well until all ingredients are fully incorporated.
  3. Bake the Dip: Transfer the mixture to a baking dish or oven-safe skillet. Preheat the oven to 350°F (175°C) and bake the dip for approximately 20 minutes or until bubbly and slightly golden on top.
  4. Serve Warm: Remove from the oven and let it cool slightly before serving. Enjoy warm with crackers, sliced baguette, or fresh vegetables for dipping.
