Ingredients
Roasted Tomatoes
- 18 oz cherry tomatoes
- 1 garlic bulb, top sliced off
- 1 cup olive oil, plus 2 tbsp extra
- 3 sprigs fresh thyme
- Salt and pepper, to taste
Whipped Goat Cheese
- 11 oz goat cheese
- 2 tbsp lemon juice
- 1 tbsp lemon zest
- 1 tbsp honey
To Serve
- 4 slices sourdough bread
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for roasting the tomatoes and garlic.
- Prepare Tomatoes and Garlic: Place the cherry tomatoes and sliced garlic bulb on a baking dish. Drizzle with 1 cup of olive oil, add the fresh thyme sprigs, and season with salt and pepper.
- Roast: Roast the tomatoes and garlic in the oven for about 35-40 minutes until tomatoes are burst and slightly caramelized, and garlic is soft.
- Whip Goat Cheese: In a mixing bowl, combine the goat cheese, lemon juice, lemon zest, and honey. Using a hand mixer or stand mixer, whip the mixture until light and fluffy.
- Toast Sourdough: While the tomatoes roast, toast the slices of sourdough bread until golden and crisp.
- Assemble and Serve: Transfer the roasted tomatoes and garlic to a serving dish. Drizzle with the remaining 2 tbsp of olive oil. Spread whipped goat cheese generously onto toasted sourdough slices and serve with the roasted tomatoes alongside.

- You can use any fresh thyme or substitute with rosemary if preferred.
- For a smoother goat cheese spread, let the cheese come to room temperature before whipping.
- Add a sprinkle of crushed red pepper flakes for a spicy kick.
