Ingredients
Carrots
- 1 1/2 lbs carrots, scrubbed, trimmed (thin carrots work best)
- 1 tablespoon olive oil
- 1 tablespoon maple syrup
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon cumin seeds (or ground cumin)
- 1 teaspoon coriander seeds (or ground coriander)
Tahini Sauce
- 1/4 cup thick tahini paste (stirred before use)
- 3-4 tablespoons water, more as needed
- 1 tablespoon maple syrup
- 1/4 teaspoon salt, more to taste
- 1/4 teaspoon pepper, more to taste
Garnish
- Dukkah, pistachios, and fresh parsley for sprinkling
Instructions
- Preheat Oven: Preheat your oven to 425°F (220°C) to ensure it’s ready for roasting the carrots evenly.
- Prep Carrots: Cut the carrots into roughly equal widths, leaving thinner carrots whole to ensure even cooking. Place them in a bowl.
- Season Carrots: Toss the carrots with olive oil, maple syrup, salt, pepper, cumin seeds, and coriander seeds until well coated, combining the sweet and spiced flavors.
- Prepare Sheet Pan: Line a baking sheet with parchment paper and spread the carrots out in a single layer to ensure they roast evenly.
- Roast Carrots: Roast the carrots in the preheated oven for 20-30 minutes until they are fork-tender at their thickest points, allowing them to caramelize beautifully.
- Make Tahini Sauce: While the carrots roast, whisk together tahini paste and water in a small bowl until smooth. Adjust the consistency with more water if necessary, then add maple syrup, salt, and pepper to taste for a creamy, slightly sweet sauce.
- Assemble Dish: Spread the tahini sauce evenly on a large serving platter. Once the carrots are cooked, pile them on top of the sauce.
- Garnish: Sprinkle the roasted carrots with dukkah, chopped pistachios, and fresh parsley to add texture, flavor, and a fresh herbal note.
Notes
- Thin carrots work best for even roasting and caramelization.
- If ground cumin and coriander are used instead of seeds, the flavors will be more intense—adjust amounts to taste.
- Adjust the tahini sauce thickness with more or less water depending on your preference.
- Dukkah can be substituted with toasted nuts and spices if unavailable.
