Hummus Base

- 1 lemon, zested (1 teaspoon) and juiced (about 3 tablespoons)
Instructions
- Prepare Ingredients: Drain and rinse the white beans thoroughly. Finely dice the shallot and roasted red peppers. Mince the garlic cloves. Chop fresh herbs carefully and set aside.
- Combine Ingredients: In a food processor, add the white beans, roasted red peppers, shallot, minced garlic, and chopped fresh herbs. Add lemon zest, lemon juice, kosher salt, red pepper flakes, and ground black pepper.
- Blend Mixture: Pulse the ingredients while slowly drizzling in extra-virgin olive oil until the mixture becomes smooth and creamy. Scrape down the sides as needed to ensure an even blend.
- Adjust Seasoning: Taste the hummus and adjust salt, pepper, or lemon juice to your preference for the perfect balance of flavors.
- Serve and Store: Transfer the hummus to a serving bowl, drizzle with a little extra olive oil if desired, and garnish with additional fresh herbs. Serve with pita, crackers, or fresh vegetables. Store leftovers in an airtight container in the refrigerator for up to 4 days.
