- 0.25 cups (1/4 cup) honey

Instructions
- Preheat Oven and Prepare Beets: Preheat your oven to 400°F (200°C). Peel and cube the beets into evenly sized pieces to ensure uniform roasting.
- Season and Roast Beets: Toss the cubed beets with olive oil, salt, and pepper until well-coated. Spread them out on a baking sheet in a single layer. Roast in the oven for about 30-40 minutes until tender and caramelized, stirring halfway through for even cooking.
- Make Balsamic Reduction: While the beets roast, combine balsamic vinegar and honey in a small saucepan over medium heat. Bring to a simmer and reduce the mixture by half, stirring frequently, until it has thickened into a syrupy consistency. Remove from heat and let cool slightly.
- Toast the Baguette: Slice the French baguette into 1/2-inch thick pieces. Toast the slices in the oven or on a grill pan until golden and crisp, approximately 5-7 minutes.
- Assemble Crostini: Spread a generous layer of goat cheese on each toasted baguette slice. Top with roasted beet cubes. Drizzle the balsamic reduction over the assembled crostini.
- Add Optional Toppings: Garnish with small basil leaves, pomegranate seeds, and grated parmesan cheese if desired. Season with additional salt and pepper to taste.
- Serve: Arrange crostini on a serving platter and serve immediately for best texture and flavor.
