Dry Ingredients

  • 2 cups pitted Medjool dates (about 19-20 dates)
  • 1 1/2 cups raw almonds

  • 12 tablespoons warm water, if mixture is dry

Instructions

  1. Prepare the ingredients: Begin by ensuring all your dates are pitted. If your dates are a bit dry, soak them in warm water for 10 minutes to soften, then drain thoroughly.
  2. Process almonds: Place the raw almonds in a food processor and pulse until they are finely chopped but not turned into flour, maintaining some texture for the energy balls.
  3. Add remaining dry ingredients: Add the pitted dates, freeze-dried raspberries, shredded coconut, cocoa powder, and chia seeds (if using) to the food processor with the almonds.
  4. Combine wet ingredients: Add the almond butter and almond extract (if using) to the mixture to help bind the ingredients together.
  5. Pulse the mixture: Process all ingredients together until a sticky, coarse dough forms. If the mixture seems dry and crumbly, add 1 tablespoon of warm water and pulse again, adding more water if needed one teaspoon at a time.
  6. Shape the energy balls: Scoop out small portions of the mixture and roll them between your palms to form balls about 1 inch in diameter.
