Ingredients
Ramp Pesto
- 1 bunch ramps (about 8-10, roots trimmed, leaves and stems separated with stems roughly chopped)
- 1/4 cup roughly chopped walnuts
- 1/2 ounce grated Parmesan (about 1/4 cup)
- 1 tablespoon fresh lemon juice
- 1/4 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1/2 cup olive oil
Bread and Topping
- 1 loaf country bread or sourdough bread, sliced (about 1 pound)
- Olive oil for drizzling
- 8 ounces fresh mozzarella, thinly sliced
- 2 tablespoons minced chives
Instructions
- Preheat Broiler: Preheat the broiler on high with a rack positioned 4-6 inches from the heating element to ensure the bread toasts quickly and evenly.
- Prepare Ramp Pesto: In a food processor, combine the ramp leaves and stems, walnuts, Parmesan, lemon juice, kosher salt, and black pepper. Pulse until finely chopped, then with the motor running, slowly drizzle in 1/2 cup olive oil until the pesto is fully combined and smooth.
- Prepare Bread: Arrange the bread slices flat across two baking sheet pans without overlapping. Drizzle each slice generously with olive oil to aid in crisping and flavor.
- Assemble Bread: Spread a generous layer of the ramp pesto on each bread slice, then evenly top with thin slices of fresh mozzarella cheese.
- Broil: Place the pans under the broiler and toast until the bread is golden and crisp and the cheese has melted, about 3-4 minutes. Rotate the pans as needed to ensure even toasting without burning.
- Finish and Serve: After broiling, spread a little more ramp pesto on the warm garlic bread and sprinkle with minced chives for freshness. Serve immediately for the best warm flavor and texture.
Notes
- Keep a close eye while broiling to avoid burning; broilers vary in intensity.
- Ramps have a seasonal availability, typically in spring; substitute with a mix of green garlic and chives if unavailable.
- Use thick-sliced country or sourdough bread for best texture and flavor.
- This recipe serves about 10 as an appetizer or side dish.
- To make it vegetarian but not vegan, ensure the Parmesan used is vegetarian-friendly.
