Ingredients
Rice and Vegetables
- 2 cups day-old white rice
- 4 scallions, chopped (whites and greens separated)
Eggs and Seasonings
- 4 large eggs
- 1 tbsp soy sauce
- 1 tsp salt
- ½ tsp white pepper
- 1 tsp chicken powder
- 1 tsp sugar
- 4 tbsp neutral oil (such as vegetable or canola oil)
Shrimp Marinade
- 10 shrimps, deveined
- ¼ tsp salt
- ¼ tsp white pepper
- ¼ tsp baking soda
Garnish
- Spring onion chili oil
Instructions
- Prepare the Shrimp: In a small bowl, combine the deveined shrimps with ¼ tsp salt, ¼ tsp white pepper, and ¼ tsp baking soda. Mix well and allow to marinate for about 5-10 minutes. This helps tenderize the shrimp and infuse flavor.
- Cook the Eggs: Heat 2 tablespoons of neutral oil in a large skillet or wok over medium-high heat. Beat the eggs lightly, then pour them into the pan to scramble until just cooked but still soft. Remove from the pan and set aside.
- Cook the Shrimp: In the same skillet, add remaining 2 tablespoons of oil and stir-fry the marinated shrimp over medium-high heat until they turn pink and cooked through, about 2-3 minutes. Remove and set aside with the eggs.
- Sauté Scallions: Add the white parts of the scallions to the skillet and stir-fry briefly until fragrant, about 30 seconds.
- Add Rice and Seasonings: Add the day-old rice to the skillet and stir-fry, breaking up any clumps, until heated through. Season with 1 tsp salt, ½ tsp white pepper, 1 tsp chicken powder, 1 tsp sugar, and 1 tbsp soy sauce. Mix well to combine all flavors.
- Combine Ingredients: Return the cooked shrimp and scrambled eggs to the skillet. Toss everything thoroughly so the shrimp, egg, and scallions are evenly distributed within the rice. Stir-fry for another 1-2 minutes to blend flavors.
- Finish and Serve: Remove from heat, garnish with the green parts of the scallions, and drizzle spring onion chili oil over the top for a spicy kick. Serve immediately.
Notes
- Use day-old rice for best texture as fresh rice tends to be too moist and clumps during frying.
- Adjust salt and soy sauce to taste based on your preferred saltiness level.
- Spring onion chili oil can be made by infusing oil with chopped spring onions and chili flakes or purchased pre-made.
- For a vegetarian version, omit shrimp and substitute with tofu or extra vegetables.
