Ingredients

Puff Pastry Base

  • 2 sheets puff pastry, thawed
  • 1 egg yolk, for egg wash
  • 1 tablespoon water, for egg wash

Filling & Topping

  • 4 tablespoons fresh thyme leaves
  • ½ cup fig jam, or your favorite jam
  • 8 ounces brie, cut into bite-sized pieces
  • 2 tablespoons honey, for drizzling
  • ½ teaspoon flaky sea salt, or more to taste

Instructions

  1. Prepare the Puff Pastry: Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry sheets on a lightly floured surface. Cut each sheet into small squares approximately 2 to 3 inches wide to form the bases of the bites.
  2. Form the Bites: Place each puff pastry square onto a baking sheet lined with parchment paper. Using a sharp knife, gently score a smaller square inside each pastry square without cutting all the way through – this will help create a border once baked.
  3. Apply Egg Wash: In a small bowl, whisk together the egg yolk and water to make an egg wash. Brush the outer edges of each puff pastry square with the egg wash. This will give the bites a beautiful golden color when baked.
  4. Add the Fillings: Spoon about half a teaspoon of fig jam into the center of each puff pastry square inside the scored border. Place a piece of brie cheese on top of the jam, and sprinkle fresh thyme leaves over each bite to impart aromatic flavor.
  5. Bake: Bake the prepared puff pastry bites in the preheated oven for 12-15 minutes or until the pastry is puffed and golden brown and the brie is melted.
  6. Finish and Serve: Remove the bites from the oven and transfer to a serving dish. Drizzle each with honey and sprinkle flaky sea salt over the top to enhance the flavor contrast. Serve warm for best taste and texture.
