Add Pepperoni and Seasonings: Stir in the chopped pepperoni, pizza sauce, and Italian seasoning. Simmer for an additional 5 minutes. Remove from heat and allow the mixture to cool slightly.

Mix in the Cheese: Once the beef mixture has cooled, stir in the ricotta cheese and shredded mozzarella cheese to create a cheesy, flavorful filling.

Assemble the Enchiladas: Preheat your oven to 375°F (190°C). Lay out the flour tortillas and evenly divide the beef mixture between each one. Roll up the tortillas tightly and secure the filling inside.

Prepare the Baking Dish: Spread 1 cup of pizza sauce over the bottom of a 9×13-inch baking dish. Place the rolled tortillas seam-side down in the dish.
