Ingredients
1 baguette, sliced into 8–10 pieces
1 cup ricotta cheese
2 ripe peaches, diced
2 tbsp fresh mint leaves, finely chopped
2 tbsp honey
1 tbsp olive oil
Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Arrange the baguette slices on a baking sheet and brush each slice lightly with olive oil.
- Toast the bread in the oven for about 10 minutes, or until golden and crisp.
- While the bread is toasting, combine the diced peaches, chopped mint, and honey in a bowl. Season with salt and pepper to taste.
- Once the baguette slices are toasted, spread a generous layer of ricotta cheese on each slice.
- Top with the peach mixture and drizzle with additional honey if desired.
- Serve immediately and enjoy the fresh, sweet flavors.
Notes
For a vegan version, use a plant-based ricotta alternative and agave nectar instead of honey.
Add chopped pistachios or almonds for extra crunch.
To make it spicier, add chili flakes to the peach mixture.
