Ingredients
2 ripe peaches
1/2 wheel Brie cheese
Fresh arugula leaves
Balsamic vinegar, for drizzling
Instructions
- Slice the peaches into thin wedges, leaving the skin on.
- Cut the Brie into small bite-sized pieces.
- Place a piece of Brie on top of each peach wedge.
- Tuck an arugula leaf on top of the Brie.
- Drizzle lightly with balsamic vinegar before serving.
Notes
Swap peaches for nectarines when in season.
Add a toasted pecan or almond on top for extra crunch.
For added sweetness, drizzle with honey along with balsamic.
Use baby spinach or fresh basil instead of arugula for a milder flavor.
Best served fresh, but can be stored in the fridge for up to 1 day.
