These Peach Brie Bites are a quick and elegant appetizer featuring juicy peaches, creamy Brie, peppery arugula, and a drizzle of balsamic vinegar. Perfect for gatherings or as a light snack.

Ingredients

2 ripe peaches

1/2 wheel Brie cheese

Fresh arugula leaves

Balsamic vinegar, for drizzling

Instructions

  1. Slice the peaches into thin wedges, leaving the skin on.
  2. Cut the Brie into small bite-sized pieces.
  3. Place a piece of Brie on top of each peach wedge.
  4. Tuck an arugula leaf on top of the Brie.
  5. Drizzle lightly with balsamic vinegar before serving.

Notes

Swap peaches for nectarines when in season.

Add a toasted pecan or almond on top for extra crunch.

For added sweetness, drizzle with honey along with balsamic.

Use baby spinach or fresh basil instead of arugula for a milder flavor.

Best served fresh, but can be stored in the fridge for up to 1 day.
