Instructions
- Prepare the base: In a small bowl, mix the graham cracker or digestive biscuit crumbs with the melted ghee or unsalted butter until the mixture is evenly moistened. Press this mixture firmly into the base of your serving dish or individual glasses to form an even crust layer.
- Make the filling: In a mixing bowl, combine the softened cream cheese and ground cardamom. Beat until smooth and creamy. In a separate bowl, whip the heavy cream with confectioners sugar and saffron or vanilla extract until soft peaks form. Gently fold the whipped cream into the cream cheese mixture to maintain the light texture.
- Incorporate carrot halwa: Fold the prepared carrot halwa gently into the cream cheese and whipped cream mixture until fully combined, ensuring the mixture is even and smooth without overmixing.
