Ingredients
1 cup balsamic vinegar (for reduction)
4 chicken breasts or cutlets
Homemade seasoned salt and pepper, to taste
4 oz mozzarella cheese, sliced or shredded
For the bruschetta topping:
2 cups diced tomatoes (Roma or vine-ripened recommended)
1/4 cup packed fresh basil, chopped
3 tablespoons extra virgin olive oil
3 tablespoons balsamic vinegar
3 tablespoons freshly grated parmesan cheese
1/2 teaspoon sugar
1 medium garlic clove, pressed or finely minced
Salt and pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

In a small saucepan, bring 1 cup balsamic vinegar to a boil, then reduce heat to simmer. Let simmer until reduced by half and syrupy (10-15 minutes). Set aside.

Season chicken breasts with homemade seasoned salt and pepper.

Heat a large ovenproof skillet over medium-high heat with a little olive oil. Sear chicken for 3-4 minutes per side until golden brown but not fully cooked.

Remove skillet from heat. Spoon reduced balsamic vinegar over each chicken breast. Top with mozzarella cheese slices or shredded mozzarella.

Place skillet in oven and bake for 10-12 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted and bubbly.

While chicken bakes, combine bruschetta topping ingredients (tomatoes, basil, olive oil, balsamic vinegar, parmesan, sugar, garlic, salt, and pepper) in a bowl. Mix gently and let flavors meld.

Remove chicken from oven and spoon bruschetta topping over each breast. Serve immediately.
Notes
Balsamic glaze can be used as a quick substitute for the reduction.
Roma or vine-ripened tomatoes are best for a firm, flavorful bruschetta topping.
Bruschetta topping can be prepared ahead to enhance flavor.
