Mozzarella Bruschetta Chicken is a delicious Italian-inspired dish featuring tender chicken breasts topped with melted mozzarella cheese and a fresh, tangy bruschetta mix of tomatoes, basil, garlic, and balsamic vinegar. This easy yet elegant recipe is perfect for weeknight dinners or impressing guests with minimal effort.

  • Total Time: 40 minutes
  • Yield: Serves 4

Ingredients

1 cup balsamic vinegar (for reduction)

4 chicken breasts or cutlets

Homemade seasoned salt and pepper, to taste

4 oz mozzarella cheese, sliced or shredded

For the bruschetta topping:

2 cups diced tomatoes (Roma or vine-ripened recommended)

1/4 cup packed fresh basil, chopped

3 tablespoons extra virgin olive oil

3 tablespoons balsamic vinegar

3 tablespoons freshly grated parmesan cheese

1/2 teaspoon sugar

1 medium garlic clove, pressed or finely minced

Salt and pepper, to taste

Instructions

  1. Preheat oven to 400°F (200°C).

  2. In a small saucepan, bring 1 cup balsamic vinegar to a boil, then reduce heat to simmer. Let simmer until reduced by half and syrupy (10-15 minutes). Set aside.

  3. Season chicken breasts with homemade seasoned salt and pepper.

  4. Heat a large ovenproof skillet over medium-high heat with a little olive oil. Sear chicken for 3-4 minutes per side until golden brown but not fully cooked.

  5. Remove skillet from heat. Spoon reduced balsamic vinegar over each chicken breast. Top with mozzarella cheese slices or shredded mozzarella.

  6. Place skillet in oven and bake for 10-12 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted and bubbly.

  7. While chicken bakes, combine bruschetta topping ingredients (tomatoes, basil, olive oil, balsamic vinegar, parmesan, sugar, garlic, salt, and pepper) in a bowl. Mix gently and let flavors meld.

  8. Remove chicken from oven and spoon bruschetta topping over each breast. Serve immediately.

Notes

Balsamic glaze can be used as a quick substitute for the reduction.

Roma or vine-ripened tomatoes are best for a firm, flavorful bruschetta topping.

Bruschetta topping can be prepared ahead to enhance flavor.

Use an ovenproof skillet or transfer chicken to a baking dish before baking.

Grilled chicken can be topped with cheese and bruschetta, then broiled to melt cheese.

Use a meat thermometer to ensure chicken is cooked to 165°F (74°C).

Fresh garlic is preferred for bruschetta, but garlic powder can substitute.

Store bruschetta topping separately if reheating leftovers to maintain freshness.
