Ingredients
Fudge Ingredients
- 3/4 cup butter (1 and 1/2 sticks; do not use margarine)
- 2 & 1/2 cups white granulated sugar
- 2/3 cup full-fat evaporated milk (do not use sweetened condensed milk)
- 12 ounce package high-quality semi-sweet chocolate chips (about 2 cups)
- 7 ounce jar marshmallow cream (also called marshmallow fluff)
- 1 teaspoon vanilla extract
Instructions
- Prepare the pan: Line an 8×8 inch square baking pan with aluminum foil or parchment paper, allowing some overhang for easy removal of the fudge. Lightly grease the lining to prevent sticking.
- Combine butter, sugar, and evaporated milk: In a medium heavy saucepan, melt the butter over medium heat. Add the granulated sugar and evaporated milk, stirring continuously until the mixture comes to a gentle boil.
- Boil the mixture: Let the mixture boil gently for about 4 to 5 minutes while stirring constantly to prevent burning and ensure the sugar dissolves completely. This helps achieve the right fudge consistency.
- Add chocolate chips: Remove the saucepan from heat and immediately stir in the semi-sweet chocolate chips until they are fully melted and the mixture is smooth.
- Incorporate marshmallow cream and vanilla: Add the marshmallow cream and vanilla extract to the chocolate mixture. Stir vigorously until the mixture is glossy and combined evenly.
- Pour into prepared pan: Transfer the fudge mixture into the lined pan and spread evenly using a spatula.
- Chill the fudge: Refrigerate the fudge for at least 2 hours or until it is fully set and firm.
- Serve: Once set, lift the fudge from the pan using the overhanging foil or parchment paper. Cut into small squares and enjoy your delicious homemade fudge.
Notes
- Use full-fat evaporated milk, not sweetened condensed milk, for the right texture and flavor.
- Be sure to stir constantly during boiling to avoid burning the mixture.
- Allow the fudge to fully set in the refrigerator before cutting for clean squares.
- You can customize the fudge by adding nuts, butterscotch chips, or other flavor extracts if desired.
- Store fudge in an airtight container in the refrigerator for up to two weeks.
