These Mint Chocolate Protein Bites are chewy, refreshing, and packed with chocolatey goodness. Made with oats, almond butter, protein powder, and a touch of peppermint, they’re a no-bake, energizing snack perfect for post-workout fuel or a healthy treat on the go.

Ingredients

1 cup rolled oats

1/2 cup almond butter (or any nut butter)

1/4 cup honey or maple syrup

1/4 cup chocolate protein powder

1/4 cup mini dark chocolate chips

1/2 teaspoon peppermint extract

1 tablespoon chia seeds (optional)

Pinch of salt

Instructions

  1. In a large mixing bowl, combine rolled oats, protein powder, chia seeds (if using), and salt.
  2. In a separate bowl, whisk together almond butter, honey (or maple syrup), and peppermint extract until smooth.
  3. Pour the wet mixture into the dry ingredients and mix until evenly combined.
  4. Fold in mini dark chocolate chips. If too dry, add 1–2 teaspoons of warm water until the mixture holds together.
  5. Roll the mixture into 1-inch balls using your hands or a small cookie scoop.
  6. Place the bites on a parchment-lined baking sheet and refrigerate for 20–30 minutes to firm up.
  7. Store in an airtight container in the refrigerator until ready to enjoy.

Notes
