Ingredients

For the Pizza Dough

  • 2 cups (250 grams) all-purpose flour or bread flour
  • ½ teaspoon salt
  • ½ teaspoon Instant yeast or active dry yeast
  • ½ cup + 1 tbsp (135 ml) water, lukewarm
  • ½ tablespoon extra virgin olive oil
  • ½ or 1 tablespoon flour or semolina flour, to roll the dough

For the Topping

  • ½ cup pizza sauce
  • 5oz (140 grams) fresh mozzarella or ½ cup shredded mozzarella
  • 1 teaspoon dried oregano
  • 3 tablespoons fresh basil, coarsely chopped

Instructions

  1. Prepare the Dough: In a mixing bowl, combine the flour and salt. Dissolve the yeast in lukewarm water and let it activate for about 5 minutes until bubbly. Add the yeast mixture and olive oil to the flour and salt, then knead until you form a smooth, elastic dough, about 8-10 minutes by hand or 5-7 minutes with a stand mixer.
  2. Let Dough Rise: Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.
  3. Preheat Oven: Preheat your oven to 475°F (245°C) and position a pizza stone or inverted baking sheet inside the oven to heat.
  4. Shape Mini Pizzas: On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use a small round cutter (about 4-5 inches in diameter) or a glass to cut mini pizza bases. Place the bases on parchment paper dusted with semolina or flour to prevent sticking.
  5. Add Sauce and Toppings: Spread a thin layer of pizza sauce evenly over each mini base. Top with fresh or shredded mozzarella, then sprinkle dried oregano and fresh basil on top.
  6. Bake: Using a pizza peel or the back of a baking sheet, transfer the parchment paper with mini pizzas onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and cheese is bubbly and slightly browned.
