Ingredients
For the Pizza Dough
- 2 cups (250 grams) all-purpose flour or bread flour
- ½ teaspoon salt
- ½ teaspoon Instant yeast or active dry yeast
- ½ cup + 1 tbsp (135 ml) water, lukewarm
- ½ tablespoon extra virgin olive oil
- ½ or 1 tablespoon flour or semolina flour, to roll the dough
For the Topping
- ½ cup pizza sauce
- 5oz (140 grams) fresh mozzarella or ½ cup shredded mozzarella
- 1 teaspoon dried oregano
- 3 tablespoons fresh basil, coarsely chopped
Instructions
- Prepare the Dough: In a mixing bowl, combine the flour and salt. Dissolve the yeast in lukewarm water and let it activate for about 5 minutes until bubbly. Add the yeast mixture and olive oil to the flour and salt, then knead until you form a smooth, elastic dough, about 8-10 minutes by hand or 5-7 minutes with a stand mixer.
- Let Dough Rise: Cover the dough with a clean kitchen towel or plastic wrap and let it rise in a warm place for about 1 to 1.5 hours or until it doubles in size.
- Preheat Oven: Preheat your oven to 475°F (245°C) and position a pizza stone or inverted baking sheet inside the oven to heat.
- Shape Mini Pizzas: On a lightly floured surface, roll out the dough to about ¼ inch thickness. Use a small round cutter (about 4-5 inches in diameter) or a glass to cut mini pizza bases. Place the bases on parchment paper dusted with semolina or flour to prevent sticking.
- Add Sauce and Toppings: Spread a thin layer of pizza sauce evenly over each mini base. Top with fresh or shredded mozzarella, then sprinkle dried oregano and fresh basil on top.
- Bake: Using a pizza peel or the back of a baking sheet, transfer the parchment paper with mini pizzas onto the preheated pizza stone or baking sheet. Bake for 10-12 minutes, or until the crust is golden and cheese is bubbly and slightly browned.
- Serve: Remove from oven, let cool slightly, then serve warm. These mini pizzas are perfect as appetizers, snacks, or a light meal.
Notes
- Use semolina flour for rolling to get a slightly crunchy bottom crust.
- If using active dry yeast, activate it properly in warm water before adding to dry ingredients.
- You can substitute fresh mozzarella with shredded mozzarella for convenience.
- Customize toppings by adding your favorite vegetables or meats.
- For extra crispiness, bake on a pizza stone preheated in the oven.
