Melkkos is a comforting and creamy South African dessert made from soft dough cooked in milk. This simple yet delicious treat, often served on chilly days, brings together the richness of milk and the soothing texture of dough. With optional spices like cinnamon, Melkkos offers a nostalgic, heartwarming flavor that’s perfect for any occasion.

  • Total Time: 30 minutes
  • Yield: 6-8 servings

Ingredients

For the dough:
2 cups cake flour

A pinch of salt

2 cups water (plus more if needed)

For the creamy milk sauce:
4 cups milk

½ cup sugar (or to taste)

Ground cinnamon (optional)

Instructions

  • Prepare the dough: In a mixing bowl, combine the cake flour and a pinch of salt. Gradually add the 2 cups of water, mixing until you form a soft dough. Add more flour if it’s too sticky.

  • Shape the dough: Divide the dough into small bite-sized pieces, such as dumplings or small dough balls.

  • Cook the dough: Boil a large pot of water. Drop in the dough pieces and cook for 5-7 minutes, or until they float to the surface. Remove with a slotted spoon.

  • Prepare the milk sauce: In a separate pot, heat the milk over medium heat. Stir in sugar and allow to simmer, but avoid boiling over.

  • Combine and cook: Add the cooked dough pieces to the milk sauce and stir gently. Let it simmer for 5-10 minutes, allowing the dough to absorb the milk.

  • Serve: Once the dough is soft, remove from heat. Serve warm, sprinkled with cinnamon if desired.

Notes

For a vegan version, use plant-based milk and a dairy-free sweetener.

Add fruit like bananas or berries for extra texture.

You can experiment with spices like nutmeg or cardamom for added flavor.
