Mediterranean Baked Chicken Dinner is a flavorful and vibrant meal that combines juicy, marinated chicken with roasted potatoes, caramelized onions, and cherry tomatoes. It’s a one-pan, Mediterranean-inspired dish that’s easy to prepare and bursting with flavor.

Ingredients

1 kg (2 lbs) bone-in, skin-on chicken thighs and drumsticks

1/2 cup (125 ml) lemon juice

6 cloves garlic, minced

2 tsp Dijon mustard (Optional)

2 tbsp honey or 1 tbsp sugar (or maple or other sweetener)

1 tbsp dried oregano

1.5 tsp paprika

1 tbsp olive oil

1/2 tsp salt

1/2 tsp pepper

5 smallish potatoes (about 7.5 cm / 3″ wide), quartered

2 red onions, quartered

1 cup (250 ml) chicken broth/stock, low sodium

250 g (8 oz) cherry tomatoes (whole)

1/2 tsp salt

1/2 tsp pepper

1 tbsp olive oil (or oil spray)

Fresh oregano, for garnish (optional)

Instructions

  1. In a large bowl, combine lemon juice, minced garlic, Dijon mustard (if using), honey, oregano, paprika, olive oil, salt, and pepper. Whisk together until well combined. Add the chicken thighs and drumsticks to the bowl and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 2 hours.
  2. Preheat the oven to 400°F (200°C). In a large baking dish or sheet pan, arrange the quartered potatoes and red onions. Drizzle with olive oil, and sprinkle with salt and pepper. Toss to coat evenly.
  3. After marinating, place the chicken thighs and drumsticks on top of the potatoes and onions, skin-side up. Pour any remaining marinade over the chicken.
  4. Pour the chicken broth into the baking dish, around the chicken and vegetables. Add the cherry tomatoes, scattering them around the dish. Roast in the preheated oven for 40-45 minutes, or until the chicken is cooked through and the potatoes are tender.
  5. Once done, remove the baking dish from the oven. Garnish with fresh oregano if desired, and serve hot.

Notes

Add Mediterranean vegetables like bell peppers, zucchini, or olives for more color and flavor.

Boneless, skinless chicken breasts or thighs can be used, but bone-in, skin-on chicken adds more flavor.

Substitute fresh oregano with basil or thyme for different herb flavors.

For extra heat, add a pinch of red pepper flakes to the marinade.

You can prepare the chicken and vegetables ahead of time, then refrigerate until you’re ready to cook.
