  • Total Time: 30-35 minutes
  • Yield: 6 servings

Ingredients

Dip Ingredients

  • 8 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup mozzarella cheese (shredded)
  • 1/2 cup Parmesan cheese (grated)
  • 4 ounces sun-dried tomato pesto
  • 2 cloves garlic (minced)
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 1/2 cup chicken broth
  • 1/2 cup shredded chicken (rotisserie works great)
  • 1/4 cup sun-dried tomatoes (finely chopped)

Garnish & Serving

  • Fresh basil or parsley (for garnish)
  • Crackers or toasted bread (for serving)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to prepare for baking the dip.
  2. Mix Ingredients: In a large mixing bowl, combine softened cream cheese, sour cream, shredded mozzarella, grated Parmesan, sun-dried tomato pesto, minced garlic, dried oregano, dried thyme, paprika, red pepper flakes, salt, and pepper. Stir well until fully blended.
  3. Add Chicken Broth and Chicken: Stir in the chicken broth until incorporated, then fold in the shredded chicken evenly into the mixture.
  4. Transfer to Baking Dish: Pour and spread the mixture into an oven-safe baking dish, smoothing the top with a spatula. Sprinkle the finely chopped sun-dried tomatoes evenly on top.
  5. Bake: Place the baking dish in the oven and bake for 20-25 minutes, or until the dip is bubbling around the edges and heated through.
  6. Garnish and Serve: Remove from oven, garnish with freshly chopped basil or parsley. Serve warm with crackers or toasted bread for dipping.

Notes

  • Rotisserie chicken is a convenient shortcut, but you can use any cooked shredded chicken.
  • Adjust the red pepper flakes to control the spice level to your preference.
  • For extra creaminess, you can add a splash of heavy cream before baking.
  • This dip can be prepared ahead and refrigerated before baking; just add a few extra minutes to baking time.
  • Use gluten-free crackers or bread to make this recipe gluten-free.
