Instructions
- Prepare the Marinade: In a medium bowl, whisk together the extra-virgin olive oil, fresh lemon juice, lemon zest, chopped mint, chopped parsley, red chili flakes, salt, and black pepper until well combined to form a vibrant marinade.
- Marinate the Mozzarella: Place the drained fresh mozzarella balls into a shallow dish or bowl. Pour the marinade over the mozzarella, making sure each piece is generously coated. Add a little extra olive oil if needed to cover the cheese.
- Refrigerate to Infuse Flavors: Cover the dish with plastic wrap and refrigerate for at least 1 hour, or up to 4 hours. This resting time allows the mozzarella to absorb the bright lemon and herb flavors along with the subtle heat from the chili flakes.
- Serve: Remove from the refrigerator about 10 minutes before serving to bring the cheese to room temperature. Serve the marinated mozzarella as an appetizer, alongside crusty bread, or as a flavorful addition to salads.
