Sweet Potatoes
- 8 small sweet potatoes or 4 large, washed and dried
- 1 tsp olive oil
- 1 tsp sea salt
- 4 tbsp unsalted butter
Creamy Yogurt Sauce
- 4 tbsp Greek yogurt or sour cream
- ½ lemon, juiced
- ¼ tsp smoked paprika
- ¼ tsp sea salt or salt to taste
- 1 tbsp dried or fresh green onions, finely chopped if fresh
Toppings

- Fresh radishes, thinly sliced
- Fresh herbs, finely chopped
Instructions
- Prepare the Sweet Potatoes: Wash and thoroughly dry the sweet potatoes. Pierce each potato a few times with a fork to allow steam to escape during cooking. Rub each potato with olive oil and sprinkle with sea salt to enhance flavor and crisp the skin.
- Air Fry the Sweet Potatoes: Place the prepared sweet potatoes in a single layer in the air fryer basket. Cook at 400°F (204°C) for 35-40 minutes, flipping halfway through, until the potatoes are tender when pierced with a fork.
- Make the Creamy Yogurt Sauce: While the potatoes cook, mix the Greek yogurt or sour cream with lemon juice, smoked paprika, sea salt, and chopped green onions in a small bowl. Adjust seasoning to taste for a balanced, tangy sauce.
- Assemble the Loaded Potatoes: When the sweet potatoes are finished, slice them open lengthwise and gently fluff the insides with a fork. Add a pat of unsalted butter to each potato, then spoon over the creamy yogurt sauce.
- Add Toppings and Serve: Top each potato with Lena’s Kitchen Pickled Onions, thinly sliced fresh radishes, and a sprinkle of fresh herbs for brightness and texture. Serve immediately while warm and enjoy!

- If you do not have an air fryer, these sweet potatoes can also be baked in a conventional oven at 425°F (220°C) for 45-60 minutes until soft.
- Substitute sour cream with full-fat Greek yogurt to lighten the sauce without losing creaminess.
- Add extra toppings such as crumbled bacon, shredded cheese, or toasted nuts for more texture and flavor complexity.
