Ingredients

For the crust:

1/2 cup unsalted butter, softened

15 oz box lemon cake mix (just the cake mix)

1 large egg

Zest from one lemon

For the filling:

1/3 cup lemon curd

1/2 cup white chocolate chips

1/4 cup sweetened condensed milk

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×9-inch baking pan with parchment paper.

  2. In a large mixing bowl, combine softened butter, lemon cake mix, and egg. Stir until the mixture forms a dough-like consistency.

  3. Press the dough evenly into the bottom of the prepared pan to create the crust.

  4. In a separate bowl, whisk together the lemon curd, lemon zest, white chocolate chips, and sweetened condensed milk. Mix until smooth.

  5. Pour the lemon curd mixture over the crust and spread it evenly with a spatula.

  6. Bake for 25-30 minutes, or until the top is golden and the center is set (a toothpick inserted into the center should come out clean).

  7. Allow the bars to cool completely before cutting them into squares. Serve chilled or at room temperature.

Notes

To enhance tartness, add extra lemon zest or lemon juice to the curd mixture.
