- 2 teaspoons sesame oil

Spicy Mayo
- ¼ cup kewpie mayonnaise
- 2 teaspoons sriracha sauce, or more to taste
- 2 teaspoons lime juice
To Serve
- 2 cups cooked rice
- 2 Persian cucumbers, thinly sliced
- 1 cup kimchi, optional
- 3 green onions, thinly sliced
- ½ teaspoon sesame seeds
Instructions
- Prepare the Korean Ground Beef: In a large skillet over medium-high heat, add the ground beef and cook, breaking it up with a spoon, until fully browned and no pink remains, about 5-7 minutes. Drain excess fat if necessary.
- Add Flavorings: Reduce heat to medium. Stir in the brown sugar, low sodium soy sauce, sesame oil, sriracha, grated ginger, and minced garlic into the cooked beef. Cook and stir for another 2-3 minutes, allowing the sauce to thicken slightly and coat the meat.
- Make Spicy Mayo: In a small bowl, combine kewpie mayonnaise, sriracha sauce, and lime juice. Mix well until smooth. Adjust the sriracha amount to your preferred spice level.
- Prepare the Rice and Toppings: If not already done, cook rice according to package instructions. Thinly slice the Persian cucumbers and green onions. Have kimchi ready if using.
- Assemble the Bowls: Divide the cooked rice between bowls. Spoon the Korean ground beef over the rice. Add sliced cucumbers, a scoop of kimchi if desired, and sprinkle with sliced green onions and sesame seeds.
- Drizzle Spicy Mayo: Drizzle the prepared spicy mayo over the top of each bowl to add a creamy, tangy heat.
