  • 1 pound pizza dough, store bought or homemade

Filling

  • 1 cup feta cheese
  • 1 cup ricotta cheese

  • 2-4 eggs (2 eggs for 2 large khachapuris, 4 eggs for 4 smaller ones)
  • 1 egg for egg wash
  • 2-4 tablespoons unsalted butter (2 tablespoons for 2 large khachapuris, 4 tablespoons for 4 smaller ones)
  • 2 teaspoons Everything But The Bagel Seasoning
  • ½ teaspoon red pepper flakes (optional for spice) or Trader Joe’s Chili Onion Crunch
  • 2 tablespoons green onion, finely chopped

Instructions

  1. Prepare the Dough: If using store-bought dough, let it come to room temperature. Roll out the pizza dough into oval or boat shapes on a lightly floured surface, approximately 8-10 inches long.
  2. Mix the Cheese Filling: In a bowl, combine feta, ricotta, shredded mozzarella, onion salt or dried dill, Everything But The Bagel seasoning, red pepper flakes (if using), and chopped green onions. Stir until well mixed.
  3. Shape the Khachapuri: Place a generous amount of the cheese mixture in the center of each rolled dough piece, leaving about 1-2 inches of dough around edges. Fold and pinch the edges inward to form a boat shape, twisting the ends to seal and create a hull that will hold the filling.
  4. Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
  5. First Bake: Place the shaped khachapuris on the prepared baking sheet. Brush the dough edges with a beaten egg wash to achieve a golden crust. Bake for approximately 12-15 minutes until the bread is puffed and starting to turn golden.
