Dough
- 1 pound pizza dough, store bought or homemade
Filling
- 1 cup feta cheese
- 1 cup ricotta cheese
- 2 ½ cups shredded mozzarella cheese
- 2 tablespoons onion salt (Trader Joe’s or dried dill)
- 2-4 eggs (2 eggs for 2 large khachapuris, 4 eggs for 4 smaller ones)
- 1 egg for egg wash
- 2-4 tablespoons unsalted butter (2 tablespoons for 2 large khachapuris, 4 tablespoons for 4 smaller ones)
- 2 teaspoons Everything But The Bagel Seasoning
- ½ teaspoon red pepper flakes (optional for spice) or Trader Joe’s Chili Onion Crunch
- 2 tablespoons green onion, finely chopped
Instructions
- Prepare the Dough: If using store-bought dough, let it come to room temperature. Roll out the pizza dough into oval or boat shapes on a lightly floured surface, approximately 8-10 inches long.
- Mix the Cheese Filling: In a bowl, combine feta, ricotta, shredded mozzarella, onion salt or dried dill, Everything But The Bagel seasoning, red pepper flakes (if using), and chopped green onions. Stir until well mixed.
- Shape the Khachapuri: Place a generous amount of the cheese mixture in the center of each rolled dough piece, leaving about 1-2 inches of dough around edges. Fold and pinch the edges inward to form a boat shape, twisting the ends to seal and create a hull that will hold the filling.
- Preheat the Oven: Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or lightly grease it.
- First Bake: Place the shaped khachapuris on the prepared baking sheet. Brush the dough edges with a beaten egg wash to achieve a golden crust. Bake for approximately 12-15 minutes until the bread is puffed and starting to turn golden.
- Add Eggs and Butter: Remove from the oven and carefully crack 1 egg into the center of each cheese-filled boat. Add a tablespoon or two of unsalted butter on top of the cheese near the egg.
- Final Bake: Return to the oven and bake for an additional 5-7 minutes, or until the egg white is set but the yolk remains runny. Watch carefully to avoid overcooking.
- Serve: Remove from the oven and serve immediately while hot, encouraging diners to mix the runny yolk with the cheese and bread for a rich and savory experience.

- You can adjust the amount of red pepper flakes or substitute with Trader Joe’s Chili Onion Crunch to match your spice preference.
- For smaller khachapuris, divide dough and ingredients accordingly (4 smaller portions).
- Ensure the egg yolk stays runny for authentic texture; bake eggs briefly in the final step.
- If preferred, substitute onion salt with dried dill for a different flavor note.
- Serve warm; khachapuri is best enjoyed fresh out of the oven.
