Toppings
- 1/3 cup crushed gluten-free graham crackers (such as Simple Mills Honey Cinnamon Sweet Thins)
- 1/4 cup toasted unsweetened coconut
Instructions
- Prepare Yogurt Mixture: In a large mixing bowl, combine the Greek yogurt, key lime juice, powdered Swerve or honey, vanilla extract, lime zest, and vanilla protein powder. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth and creamy.
- Spread the Mixture: Line a baking sheet or tray with parchment paper. Evenly spread the yogurt mixture across the parchment-lined surface, creating an approximately 1/4-inch thick layer to ensure proper freezing and easy breaking.
- Add Toppings: Sprinkle the crushed gluten-free graham crackers and toasted unsweetened coconut evenly over the top of the spread yogurt mixture. Gently press toppings into the surface to help them adhere.
- Freeze: Place the baking sheet in the freezer and freeze for at least 3-4 hours or until the yogurt bark is completely firm and frozen solid.
- Slice and Serve: Remove the frozen yogurt bark from the freezer and peel it off the parchment paper. Using a sharp knife, cut or break it into bars or chunks of desired size. Serve immediately or store in an airtight container in the freezer until ready to enjoy.
