Apples
- 4 Honeycrisp apples, peeled, cored, and thinly sliced (about 1.5 lbs)
Batter
- 2 eggs
- ⅓ cup sugar
- ½ cup milk, warmed
- 2 tablespoons butter, melted
- 1 teaspoon pure vanilla extract or vanilla bean
- ½ cup all-purpose flour
- ¼ teaspoon salt
- 1 teaspoon baking powder

Instructions
- Prepare the apples: Peel, core, and thinly slice the Honeycrisp apples to about 1/8 inch thickness. Set aside.
- Mix the wet ingredients: In a large mixing bowl, beat the 2 eggs until they become frothy. Add the ⅓ cup sugar and continue to mix until combined. Then add the ½ cup warmed milk, 2 tablespoons melted butter, and 1 teaspoon vanilla extract or scraped vanilla bean seeds. Stir until well incorporated.
- Combine the dry ingredients: In a separate bowl, sift together ½ cup all-purpose flour, ¼ teaspoon salt, 1 teaspoon baking powder, and ½ teaspoon cinnamon if using.
- Blend dry and wet mixtures: Gradually add the dry ingredients into the wet ingredients while gently folding to avoid overmixing. The batter will be thin and somewhat runny; this is expected.
- Layer the apples and batter: Butter a cake pan and layer a third of the thinly sliced apples evenly on the bottom. Pour a third of the batter over the apples. Repeat layering apples and batter two more times finishing with batter on top. Optionally, sprinkle sliced almonds over the batter for added crunch.
- Bake the cake: Preheat the oven to 350°F (175°C). Place the cake pan in the oven and bake for 40 to 45 minutes until the top is golden, and a toothpick inserted into the center comes out clean.
- Cool and serve: Let the cake cool in the pan for at least 15 minutes before slicing. Serve warm or at room temperature. This cake pairs wonderfully with a dusting of powdered sugar or a dollop of whipped cream.
Notes
- Using Honeycrisp apples provides a nice balance of sweetness and tartness, but other firm apples like Granny Smith or Fuji can also be used.
- Do not overmix the batter to keep the cake light and tender.
- The optional cinnamon enhances the flavor but can be omitted for a more straightforward apple taste.
