Ingredients
2 cups all-purpose flour
3 tbsp granulated sugar
1 tbsp baking powder
Pinch of salt
1 egg
2 tbsp melted unsalted butter, cooled
1 1/2 cups milk
1 tsp vanilla extract
Mixed berries (optional)
Instructions
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, whisk egg, melted butter, milk, and vanilla extract until smooth.
- Pour wet ingredients into dry ingredients and mix until just combined. Do not overmix.
- Lightly grease silicone egg bite molds with butter or cooking spray.
- Fill each mold about 2/3 full with batter, adding berries if desired.
- Cover molds with foil. Add 1 cup water to the Instant Pot and place the trivet inside.
- Place mold on trivet, seal lid, and set Instant Pot to steam for 8 minutes.
- Allow natural release for 5 minutes, then carefully remove molds.
- Cool slightly before removing bites from molds.
- Serve warm with syrup, honey, or powdered sugar.
Notes
Do not overmix the batter, as it can make the bites dense.
Grease molds well to prevent sticking.
Use whole wheat flour for added fiber.
Cover molds with foil to prevent excess moisture.
These can also be baked in a mini muffin tin if no Instant Pot is available.
