This Instant Pot oatmeal recipe creates a creamy, comforting breakfast using steel cut or rolled oats cooked under pressure with cinnamon and a pinch of kosher salt. It’s quick, easy, and customizable with your favorite toppings and almond milk.

  • Total Time: 28 minutes
  • Yield: 2 servings

Ingredients

Oat Ingredients

  • 1 cup steel cut oats
  • 2 cups water
  • 1 cup Almond Breeze almondmilk Vanilla
  • 1 cinnamon stick
  • 1 generous pinch of kosher salt

Alternate Oat Ingredients

  • 1 cup old fashioned rolled oats
  • 1 cup water
  • 1 cup Almond Breeze almondmilk Vanilla
  • 1 cinnamon stick
  • 1 generous pinch of kosher salt

Toppings (optional)

  • Additional almond milk, to taste
  • Optional toppings such as fresh fruit, nuts, or sweeteners

Instructions

  1. Prepare the oats and liquids: Add your choice of oats—either steel cut or old fashioned rolled oats—into the Instant Pot. Pour in the corresponding amounts of water and Almond Breeze almondmilk Vanilla. Add the cinnamon stick and kosher salt to the pot.
  2. Set the Instant Pot: Close the lid securely and press the manual or pressure cook setting. Set the timer to 3 minutes on high pressure.
  3. Natural pressure release: When the cooking time ends, allow the Instant Pot to naturally release pressure for 20 minutes. After 20 minutes, carefully flip the release valve with the end of a wooden spoon to release any remaining steam, making sure to keep the lid facing away from you as you open.
  4. Serve and enjoy: Remove the cinnamon stick and stir the oatmeal. Add your preferred toppings and extra almond milk if desired. The oatmeal can be refrigerated in an airtight container for 3 to 5 days.

Notes

  • You can use either steel cut oats or old fashioned rolled oats; just adjust the liquid amounts accordingly.
  • Natural pressure release is important to ensure creamy oatmeal and prevent splatters.
  • Almond milk adds subtle vanilla flavor and creaminess.
  • Store leftovers in the refrigerator for up to 5 days and reheat with additional almond milk to loosen the texture.
  • Customize with toppings like fresh fruit, nuts, seeds, or a drizzle of honey or maple syrup.
