  2. Roast Hazelnuts: Spread the raw hazelnuts evenly on a large baking tray and roast in the oven for 8 to 12 minutes until their skins darken and the nuts emit a fragrant, golden aroma. Remove and place them on a cooling rack for 5 minutes.
  3. Peel Hazelnuts (if needed): If your hazelnuts have skins, transfer them in small batches into a clean kitchen towel. Vigorously rub to remove the skins. Separate the peeled nuts from the skin and discard the skins. Repeat until all hazelnuts are peeled.
  4. Blend Hazelnuts: Place the peeled hazelnuts into a food processor bowl. Blend on medium to high speed; the nuts will first become crumbs then start releasing oil, turning into a creamy liquid. This can take 5 to 10 minutes depending on your processor and desired texture. Scrape the sides and bottom periodically for even blending.
  5. Store: Transfer the hazelnut butter into a clean jar or airtight container. Refrigerate and use within one month to maintain freshness.
