- Prepare the Sweet Potatoes: Wash, peel, and cut the sweet potatoes into 1-inch chunks. This ensures they cook evenly and caramelize nicely during roasting.
- Mix Seasoning and Oil: In a large bowl, combine the honey, melted coconut oil (or your preferred oil), cinnamon, and any optional spices like pumpkin pie spice or nutmeg. Add a pinch of salt and pepper if desired. Stir well to create a flavorful glaze.
- Coat the Sweet Potatoes: Toss the sweet potato chunks in the honey-spice mixture until each piece is evenly coated. This will help develop a sweet, spiced caramelization when roasted.
- Roast the Sweet Potatoes: Preheat your oven to 400°F (204°C). Spread the coated sweet potatoes in a single layer on a baking sheet lined with parchment paper or lightly greased. Roast for about 25 to 30 minutes, turning halfway through, until sweet potatoes are tender and golden brown around the edges.
- Prepare Honey-Cinnamon Dip: While the sweet potatoes roast, mix the Greek yogurt or sour cream with honey and cinnamon in a small bowl until smooth. Adjust sweetness or cinnamon to your taste.
