- Melt the White Chocolate: In a microwave-safe bowl, melt ¾ cup of white chocolate chips by heating in 20-second intervals, stirring well between each interval until smooth and fully melted. Alternatively, melt the chocolate gently in a double boiler over simmering water.
- Blend the Ingredients: Add the toasted pistachios, melted white chocolate, 1 tablespoon sugar, and ¼ teaspoon salt to a food processor or high-powered blender. Begin processing, gradually adding ⅓ cup water in small increments to maintain a smooth, spreadable consistency.
- Add Oil (Optional): If desired, add 1½ tablespoons of a neutral oil such as vegetable or light olive oil to achieve a creamier texture. Continue blending until the mixture is smooth and well combined. Scrape down the sides as needed to ensure even blending.
- Adjust Consistency and Flavor: Taste the spread and add more sugar or salt if preferred. If the spread is too thick, add a little more water, a teaspoon at a time, until you reach your ideal consistency.
- Store and Serve: Transfer the pistachio spread to a clean airtight jar or container. Refrigerate for up to two weeks. Bring to room temperature before serving for easier spreading.

- You can substitute the white chocolate chips with white chocolate bars chopped finely if needed.
