Quick and easy to prepare, it’s a fun twist on pizza that will have everyone coming back for more!

  • Total Time: 25-30 minutes
  • Yield: 4-6 servings

Ingredients

For the Beef Mixture:

1 pound lean ground beef

1 packet (1 ounce) taco seasoning

1/2 cup water

For the Mexican Pizza:

6 medium flour tortillas

1 can (16 ounces) refried beans

1 can (10 ounces) red enchilada sauce

1 cup shredded cheddar cheese

1 cup shredded pepper-jack cheese

1 Roma tomato, diced

1 green onion, diced

1 small can sliced black olives

Instructions

Prepare the Beef Mixture:

  1. Cook the Ground Beef:

    • In a large skillet, cook the ground beef over medium heat, breaking it apart with a spatula, until browned and fully cooked (about 5-7 minutes).

  2. Season the Beef:

    • Add the taco seasoning and water to the beef. Stir to combine and simmer for 5 minutes until the mixture thickens. Remove from heat and set aside.

Assemble the Mexican Pizzas:

  1. Preheat the Oven:

    • Preheat your oven to 375°F (190°C).

  2. Toast the Tortillas:

    • Lightly toast the flour tortillas in a dry skillet over medium heat for 1-2 minutes on each side, or bake in the oven for a crispier texture.

  3. Spread Refried Beans:

    • Lay each toasted tortilla on a baking sheet. Spread a thin layer of refried beans on each tortilla.

  4. Add the Beef Mixture:

    • Spoon the beef mixture over the beans and spread it evenly.

  5. Top with Enchilada Sauce and Cheese:

    • Pour enchilada sauce over the beef mixture and sprinkle both shredded cheddar and pepper-jack cheese over each pizza.

Bake the Pizzas:

  1. Bake the Mexican Pizzas:

    • Place the pizzas in the oven and bake for 10-12 minutes, or until the cheese is melted and bubbly and the edges of the tortillas are crispy.

  2. Remove from Oven:

    • Once baked, remove from the oven and set aside.

Add Fresh Toppings:

  1. Garnish the Pizzas:

    • Top each pizza with diced Roma tomato, green onions, and sliced black olives.

  2. Slice and Serve:

    • Slice the pizzas into wedges and serve immediately. Add sour cream or guacamole on the side for extra flavor.

Notes

Spicy Version: Add jalapeños or hot sauce to the top for some extra heat.

Vegetarian Option: Skip the ground beef and add sautéed vegetables, more beans, or cheese for a veggie-filled pizza.

Add More Cheese: For extra cheesiness, add a second layer of cheese before baking.

Swap Tortillas: Use corn tortillas for a gluten-free version or whole wheat tortillas for a healthier alternative.
