1 teaspoon instant yeast (3 g)
1 teaspoon sugar (4 g)
1 tablespoon olive oil (15 g)
½ cup pizza sauce
12 slices salami or pepperoni (about 4 oz.)
1 cup mozzarella cheese, shredded
1 cup ricotta cheese
1 egg, beaten (for egg wash)
Instructions
- In a large bowl, combine flour, salt, yeast, and sugar. Add water and olive oil, mixing until a dough forms.
- Knead on a floured surface for 6–8 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.
- Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
- Punch down dough and divide into 4 pieces. Roll each into a 7–8 inch circle.
- Spread pizza sauce on half of each circle, leaving a border.
- Layer salami or pepperoni, sprinkle mozzarella, and add spoonfuls of ricotta.
- Fold dough over to form a half-moon shape. Press edges with fingers or fork to seal.
- Transfer calzones to baking sheet and brush tops with beaten egg.
- Bake 15–18 minutes, until golden brown and puffed.
- Cool slightly before serving.
Notes
Swap salami/pepperoni for sausage, chicken, or ham.
Add veggies like mushrooms, spinach, or peppers.
Try pesto or Alfredo instead of pizza sauce.
Experiment with cheeses such as provolone or feta.
