Homemade Calzones are a pizza-inspired handheld meal with a fluffy golden crust filled with savory meats, creamy cheeses, and zesty sauce. Perfect for family dinners, parties, or freezer-friendly meal prep.

Ingredients

3 cups all-purpose flour (375 g)

1 teaspoon salt (6 g)

1 cup water (240 g)

1 teaspoon instant yeast (3 g)

1 teaspoon sugar (4 g)

1 tablespoon olive oil (15 g)

½ cup pizza sauce

12 slices salami or pepperoni (about 4 oz.)

1 cup mozzarella cheese, shredded

1 cup ricotta cheese

1 egg, beaten (for egg wash)

Instructions

  1. In a large bowl, combine flour, salt, yeast, and sugar. Add water and olive oil, mixing until a dough forms.
  2. Knead on a floured surface for 6–8 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled.
  3. Preheat oven to 450°F (230°C). Line a baking sheet with parchment paper.
  4. Punch down dough and divide into 4 pieces. Roll each into a 7–8 inch circle.
  5. Spread pizza sauce on half of each circle, leaving a border.
  6. Layer salami or pepperoni, sprinkle mozzarella, and add spoonfuls of ricotta.
  7. Fold dough over to form a half-moon shape. Press edges with fingers or fork to seal.
  8. Transfer calzones to baking sheet and brush tops with beaten egg.
  9. Bake 15–18 minutes, until golden brown and puffed.
  10. Cool slightly before serving.

Swap salami/pepperoni for sausage, chicken, or ham.

Add veggies like mushrooms, spinach, or peppers.

Try pesto or Alfredo instead of pizza sauce.
