These Healthy Raspberry Oatmeal Cookies are a wholesome and naturally sweet treat made with ripe bananas, oats, and fresh or frozen raspberries. Packed with chia seeds, dried fruit, and a hint of cinnamon, they offer a nutritious, fiber-rich snack perfect for breakfast or anytime indulgence without guilt.

  • Total Time: 25-28 minutes
  • Yield: 12-14 cookies

Ingredients

Fruits

  • 2 spotty bananas (160 grams, peeled)
  • 1 cup frozen raspberries (150 grams) or any fresh/frozen berries
  • ¼ cup currants or sultanas, or other dried, chopped fruit

Dry Ingredients

  • 1 ½ cups rolled oats (160 grams) (use gluten-free certified oats for gluten-free option)
  • ¼ cup desiccated coconut or shredded coconut
  • ¼ teaspoon cinnamon

Seeds

  • 2 tbsp chia seeds

Instructions

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. Mash the bananas: In a large mixing bowl, mash the peeled bananas thoroughly until smooth and creamy to form the base of the cookie dough.
  3. Add berries and mix: Gently fold in the frozen raspberries (or berries of choice) to the mashed bananas, being careful not to over-mix to preserve some berry texture.
  4. Combine dry ingredients: In a separate bowl, mix the rolled oats, cinnamon, desiccated coconut, chia seeds, and dried chopped fruit until evenly distributed.
  5. Mix the dough: Add the dry ingredients mixture to the banana and berry mixture and stir until all components are well incorporated into a sticky cookie batter.
  6. Form cookies: Using a tablespoon or your hands, scoop portions of the dough and place them onto the prepared baking sheet. Flatten them slightly with the back of the spoon or your fingers to shape.
  7. Bake the cookies: Place the baking sheet in the oven and bake for 15-18 minutes or until the cookies are set and lightly golden around the edges.
  8. Cool and serve: Remove the cookies from the oven and allow them to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. Enjoy as a healthy snack or breakfast treat.
