Instructions
- Preheat Oven: Preheat your oven to 320°F (160°C) and line a baking sheet with parchment paper to prepare for baking the cookies.
- Make Dough: In a small bowl, combine the almond flour, white almond butter, maple syrup, vanilla powder, and grated orange zest. Mix until a soft dough forms. The dough may be a bit crumbly at first; warming it between your hands can help it become more pliable.
- Shape Cookies: Divide the dough into 14 equal pieces. Roll each piece into a small cylinder with tapered ends, then gently shape each into a crescent. The dough might crack slightly due to its crumbly nature—this is normal.
- Arrange for Baking: Place the crescent-shaped cookies onto the prepared baking sheet. Since they won’t spread much during baking, you can place them relatively close to each other.
- Bake: Bake the cookies in the preheated oven for 10-12 minutes, watching for the edges to start turning golden. The cookies themselves will remain pale but will be set and delicate when done.
- Prepare Vanilla Sugar: While the cookies are warm, mix 4-5 tablespoons powdered sugar with 1/2 teaspoon vanilla powder in a small bowl.
- Coat Cookies: Roll each warm cookie in the vanilla sugar mixture until fully coated. This forms a sweet, fragrant layer on the surface.
- Cool and Store: Allow the cookies to cool completely. Store them in an airtight container at room temperature for up to a week or freeze for up to one month. Refresh with a sprinkle of powdered sugar if needed after a few days.
Notes
- The dough may feel oily because of the natural oils in almond butter and almond flour; this is normal.
- Watch baking time carefully. Removing cookies just as they set and edges turn golden ensures a soft, buttery texture. Overbaking results in a hard texture.
- Cookies can be stored at room temperature in an airtight container for a week or frozen for up to a month.
- If vanilla sugar gets absorbed by the cookies after a few days, simply sprinkle extra powdered sugar to freshen them up.
